The Jersey cow originates from the island of the same name on the English Channel. A small breed, it is very docile and well-suited to pastures, though more recently it has been successfully introduced in many intensive livestock farms. Jersey milk is unique and has high percentages of fat that make it excellent for making butter and yogurt.
